It could be differences in how dimensions are measured (especially in regards to legroom, headroom, etc)
I dont think there is a standard - manufacturers can roughly measure however they want. Front seat all the way forward and seatback straight up, etc. Since there is nothing specifying HOW they do it, its almost impossible to actually compare between manufacturers.
And even within the same manufacturer they may have measured differently forever ago than they do now (good example: somehow on paper the Acura TLX has more legroom than our 2003 TL, yet when we drove the TLX, it was CLEARLY not the case)
The fact that the ES even comes close to the LS is impressive in its own right. Even with me (the tallest in our family, but Im not that tall....only 5'9") the passenger behind me in the rear seat who is same height as me still had plenty of legroom left. When my kids are in the back seat they look like they have 1.5 feet of legroom.

1st Gen LS
I had the 1st gen LS and it was pretty spacious and fast.
I can only imagine then, if the new ES is similarly sized and more powerful!
