Default 'Offset' Explanation

Hey.. i was wondering if someone could help me with the offset measurements and basically how they work.. I think i understand that the offset is the distance between the spokes and the center axle.. but how is it measured?? For instance, my Motegi DV5's have a 40+ offset (was listed on TireRack where i bought theM), but i've seen people say that they'd never go with an offset bigger than 35+ for the IS250... i'm not sure what this means basically.. can anyone help explain how the offsets work for me, and how they relate to tire/rim size???

any help is appreciated.. thanks
