chome is a dipping method to put the chrome on top of the aluminum for the shinny look. you can think of it as a layer of "paint" that looks very shinny. however, it can cheap off, coz'.... it's a "paint"
polish is just a process to keep on sanding and buffing very very fine on aluminum to make it super shinny. so it's still the original surface but it's polished to very smooth
chrome makes the wheels weaker (it's an inherent "by-product" of chroming process), but it's more resistent to stuff like brake dust than polish, in general

Those are indeed iFORGED Flux, and as it has been referenced Hi-Polished is recommended. Also to add another option, hi-polished can be clearcoated which renders its ease of maintence the same as chrome (soap/water/dry)
