I know having ceramic pads rules out some rotors, so what am I able to use?

 

you can use any rotor you want... i don't see any real problems with ceramic pads... i ran them on my AE92 race car... worked great... every set of pads required a new set of rotors tho..

what brand of pad, and what's the part number?
