Hah! I remember running straight 50w in my old shovelhead and if it fell below 50° out, the electric start wouldn't even turn it over

Exactly!

EVERY time you cold start an engine (even at +90F) your are causing wear to your engine. Theoretically, we could all benefit from a electric pump to prime and pressurize the engine's oil system before the starter motor ever rotates the engine and spares us from the dreaded first few seconds at startup, when oil pressure is nill. Or you can relax, have a beer, and rest your mind knowing that lots of engineering went into oils and engines, making it all work "well enough" to last just fine without it. Gotta watch stuff like this, it can become kind of an OCD thing.

I run 5w30 all the time. Temps in CA don't justify going higher in viscosity. remember that oil has to be thin enough to get in the tight spaces of bearings and such. If it gets really hot or I have a track day coming, I mix in a quart or two of 10w30.

if your area ever drops below 0 degrees, stick with the 5w30, its pretty simple.
If your area is always above 30 degrees or so, you can run 10w30 just fine.

The most important choice on a 2jz is not 10w or 5w, but rather synthetic or not.
I would run at least a blend if N/A, and full synthetic if you are turbocharged.
The blend is a good choice for most especially if your motor leaks/burns some oil.

If you are turbocharged, you normally run a higher number oil, most recommend at least 10w30.

They is nothing wrong with 15w50 for boosted applications.
My friend runs 25w50 on his turbo sentra.
I used 15w40 before works great on my SC when i was 1jz and even when i went 2jz. I use 15w40 in the summer and 10w30 syntec in the winter.
Now i have been running 10w30 mobil one ,i've never used 5weight oil.

Is it bad to switch directly over to switch over from using a regular oil to a synthetic or blend oil? I've heard so many conflicting opinions on this that I'm not sure which oil would be best.

I've run synthetic in a few different cars and always just switched to it at an oil change and never had any problems. The only thing I've noticed is that if you have a small oil leak with regular oil it will become a big leak with synthetic. Thats why I haven't switched my STS to it, the half case leak will go from annoying to precipitous.
