It's hard to say for sure since tire widths vary from manufacturer to manufacturer.
Assuming your adapter is 20mm making your effective offset +3. Your wheel will stick out roughly 3/4" more than what mine is right now. Mine is currently aggressively cut, no pull. I think the 245's sidewall will sit where mine are right now after the stretch and coming out 3/4" more. It's going to be tight.
Even the 275's on my 10.5's are a bit stretched for my tastes, haha.

It might rub a little with the 265's. However the size and offset are dead on..

I am new to the game, but does the center bore make a difference if it's larger then 60.1mm? I'm looking into some wheels with 18x+ +20 265/35/18 front, and 18x10 +18 285/30/18 rear with a bore of 73mm. I'm lowered on tokico blues and tanabe springs. Will these fit with or without any modification. Thanks for your help

^, are these 18 x 10's all around?
If so, I don't think they will fit with factory fenders. I don't think you can get away with just a cut or roll in the rear. You'll have to go with some stretch to make these fit without major body work.
The bore 73mm is okay, you'll need to get a set to of hubcentric rings to fit 60.1mm to 73mm.

Rim Brand and Type: Volk Racing GT-7 ( silver )
Rim Size f/r: 18x8(F), 18x9(R)
Rim Offset f/r: +30(F), +30(R), - Nissan 350Z Fitment, Clears TT Brakes
Tire Size f/r: 245/40/18(Front - Falken ZIEX ZE-512), 285/35/18(Rear - Falken ZIEX ZE-512)
Suspension Setup: Tein Super Sports coilovers
Comment On Ride:I love the way the coilovers and wheel ride. Tires are great, and get great traction except in the rain from a dig. Just want to do some fender modifications so I can lower it a little more

I've got 18x10 +15 all around w/ 225/40F 245/40R
but I know I can do 265/35 rear and probably get away with a 235/40 or a 255/35 up front.

For those wheels, the tires you have on there are near the widest you can go without the tire mushrooming on you. If you are into mushrooming (complete opposite of stretching) then yeah you can mount wider tires.
Widening wheels in not out of the question but you have to ask yourself if it's worth the troubles and cost. If you have multi piece wheels, it's as simple as swapping out barrels for something wider. Single piece are more difficult, they cut the wheel in half and add a section; due to labor it can get expensive.
As far as 18"s or 19"s, it's all in offsets. Both wheels in relative diameters will have similar fitment.
Body work wise, there's tons of threads on here.
