"I think the bounce test" is done by pushing down on corner of the car and releasing. If it comes back up and settles quickly your struts are good. If it goes up and bounces a few times before settling the stuts are worn. Again, this may not be the correct procedure, but I have heard of doing something like that to check shocks. But you know how some stories can travel.
The creaking is more than likely worn out bushings. And there are plenty of them under there. If you can afford it, replace them all at once and get it over with.
Supra TT wheels look a little funny on the front of SCs without some type of spacer w/longer studs or hubcentric adapter. I recently added some wheel adapters to push my front wheels out a little more. Now when I hit a good enough dip the tire will run on this particular bolt right at the peak on the inside of the fender well. It did not do it before the adapters. I might just remove that bolt and hope that there won't be any adverse effects from it being removed. This could be why yours rubs as well, the wheels stick out farther than they are supposed to causing it to rub when you hit a bump.

you sure it's tire/wheel rubbing??? as high as it sits, I think you would be hard pressed to get the tire to touch the inner fender... are there clean marks anywhere, and if so, where at (clean means the tire is rubbing)
i was just thinking that if the shocks are also the problem, it should be bouncing on dips and uneven pavements right? 'cause mine still feels a little stiff, but i could be wrong.
i already changed my struts a month ago & found out that it was the culprit.
i bought a new kyb strut & decided to changed the springs as well with eibach pro-kit.
the ride is now much better & a bit stiffer but still comfy. problem is i still hear a "creaking" noise in the front sometimes. i guess i'm gonna have the change the lca bushings too, right?
anybody knows how much it would cost (labor) to change those?

what, i thought those were stock...here's mine
