My '17 is at over 125k miles (200k+ km) and I need to replace a strut bearing but now wondering if it's time to actually replace the struts themsevles. Definitely not spending the money on the overpriced oem ones.

Does anyone make adjustable struts/shocks that fit our cars?
If the shocks are not leaking and is performing fine - I would just replace the strut bearing only. As for aftermarket - it's going to quite subhective.

I think my rears are done, going over speed bumps there's a loud thump from the rear as if the shocks are bottoming out.

The Tein seem to be nice since they can be adjusted so you don't end up with too soft or too harsh of a ride. The adjustable FSport suspension, honestly I can't really tell a difference between the settings besides throttle response.

I do a lot of towing so that probably doesn't help the rears.

Many years back I had to replace shocks on my 2008 RX 350 with about 140K miles. I was offered aftermarket parts to save $$, and went for this. What a mistake! That RX never drove the same and I learned a lesson: if it comes next time to replace shocks, I will only go for OEM parts.

F-Sport struts/shocks are over $2500 USD and that's buying them from a discount retailer. You're not saving a couple hundred going aftermarket like you did with your 2008, you're saving couple thousand.

I would avoid the TEINs, I wanted to like them until I followed a member on the RX FB group who ran them. They were only okay at best and then the valving adjustment **** (which didn't make much of a difference in adjustments anyway) rusted and snapped off after only two winters. They do not hold up like some of the nicer shocks such as the 2014-2019 Highlander Bilsteins at all

If you are gonna tow with it then Bilstein's would be ideal.
