Hit Menu button.
On the main screen, find Climate, click that.

Lower left side main screen, click AC which will be green for on, and not green for off (vent only). If you turn up your fan setting, it will just bring in outside air.

Pro tip: As I near my destination, where I know my car will be parked for more than just a few hours, I always turn off my AC at the last block or 2 for example, just before I reach my house. I keep the fan setting on high. This dries out the AC ducts. You can smell the humidity coming out of the vents when you do this. This will help reduce mold growth in the ducts and AC evaporator.

^^ Excellent tip, especially for folks who live in very humid climates.

So once you set it to vent only, how do you turn on AC without having to go through the settings again? Or am I completely missing something?

My guess is that you'll have to go back through everything - unless cycling the "Auto" button does it.

For those that care - just pressing the "Auto" button resets this. At least on my 2015.
