Break Pedal Start
I noticed starting a few days ago that when press on the break pedal to start the pedal does not depress very far. It moves about an inch or two. I after it starts the pedal moves normally. It has to sit for a while before it happens again. This happen also when I park it overnight in the garage. Any ideas?

Sounds like a leaking vacuum brake booster. The booster holds vacuum in order to assist your braking, and usually, the seals are good enough that it can hold the vacuum overnight. In the case of leaky seals, the vacuum will be lost and you will get that hard-to-press feeling.
Try this, turn off your engine, then pump the pedal a few times. That should release all vacuum since the vacuum is provided by a running engine. After that, see if the pedal exhibits the same behaviour you are experiencing now.
Caveat : Some hybrid models (most?) have an electric motor to provide the needed vacuum, and in my experience, will trigger its operation when more vacuum is needed, even if the car is switched off.

After driving to work, I turned off the nx and pumped the brakes a few times until it resisted. About 6-7 times. This seems to be normal from what I recall about past vehicles.

I asked the dealer about this and he said its normal. I don't think this is normal. Can someone confirm if you start in the morning does the pedal move more than 1 inch? Thanks

I can confirm that the vacuum in the brake booster can last for a few days. Not just overnight.
If your brake pedal is loosing its vacuum overnight, your seals are definitely leaking.
