Is it fine to change your diff fluid with just the rear jacked up?

I apologize I answered this without looking at mine to see where the hole is. I pictured this in my mind as the fill plug at rear of housing like all cars used to be. Understand what you are talking about now. Sorry

That said even with the fill plug at the side like that it's not going to make much difference if the rear of the car is raised and the front isn't.
Yes, you may only get 1.35 quarts in there instead of 1.4 quarts but that's not going to affect the performance or reliability in any way.
Ideally do it with the car jacked front and rear so it's level, but if you can't then do the best you can.

Or, spend $USD70 for 2 pairs of plastic low profile ramps(post #8).

1 pair front & 1 pair at the rear, keeping it level.

Cheap, very safe, light weight, effective.

They help me do engine oil changes on my car without the need to jack it up.

yeah thatd be ideal, but the transmission ecu is out getting fixed right now to help with the occasional rough shifting and the rough P to drive and P to R shift. And jacking up the front seems so sketchy to me, its hard to tell where to put it with all the plastic covers and if it where to slip because its not in the right spot thatd be very bad

Yes, these low profile ramps can make life easier by being able to avoid the need to find jacking points, and then finding locations to place the jack stands.

The sets that I have are very light weight(I purchased a second set after finding how well the first set worked out), yet are made of heavy duty plastic.

True, the low profile version does not lift much, but they are also made in larger lift height versions, for not much extra $.

The low profile sets should lift enough for you to be able to reach the differential fill plug.
