This project seems like a difficult task. Can anyone who has done this recently advise as to how it was done successfully and the approximate cost. We'd like a Apple Car Play capable unit and happy to use the existing speakers etc. I am looking for specific components required and also whether or not we will need a new amp with a bypass of the stock one. Thanks very much.

I'm going to be doing the same thing but not sure anyone is going to point us in the right direction. I started with Crutchfield to look at what would fit, options, etc.....
This has been covered extensively but here are the highlights...
Crutchfield's stuff is junk. It may or may not work. The best option was the kit from BeatSonic but it is no longer being produced and it is impossible to find. You can find the BS mounting kit which is OEM-quality in Japan still. Your best bet now is the BS mounting kit, run a new amp and bypass the stock Pioneer amp completely. You can tap into the speaker wires from the harness that goes to the stock amp though you'll need the wiring diagram for colors and what plug.
I did my non-nav/non-ML car a few years back and if I could do it over, I'd do a new amp while I was in there.
