SC300 meet S2K
All cutoffs are made of metal, for all low beam HID projectors, its a built in fixed cutoff line just like in the JDM Soarer projector bowl. Only bi-xenon's have a moveable shield for their hi/lo functionality.

Mine pretty much looks like that. I guess the year does matter. I don't know what year mine are from since I got them from eBay. They were only on the ES300 from 92-94 so maybe your lights are from 92-93? Funny how we know more about the ES300 fogs than the ES300 owners.

so does that mean i can go find a 3" projector.. and just replace the stock ones? and get a nice Cut off?

There is a difference between a 3" diameter projector lens, and the rest of the projectors dimensions (width, length, height). Just saying you want to swap in any 3", and it will fit, is not the best way to go about a retrofit.
You have to take into consideration projector dimensions, and limited room inside the SC headlight. Do your homework, and you will be happy with the results.

Let me see the pictures of the cutoff once your done like off a parking garage! Im thinking that the SC headlight covers are to thick and defract the lights differently. Who knows, but Im sure it'll be better than the stock dot projectors!
