The big issus here is how you integrate this into the existing display and touchscreen in the vehicle. You basically can finagle the display, but you can't use the builtin touchscreen. And you can't just replace the display without breaking the climate control system, etc...
For driving rear seat displays equipped with touchscreens though, it's a nice solution.

for the 3gs yes... but 2gs and under? it's a phenomenal project!
ingenious what u just thought (USB wifi), with the low power consumption you can probably suck juice from the car's battery for a week and still be okay LOL....
for me, i'd fabricate a DVD drive(w/ anti-shock) into the armrest of the car, hook up two touch-screen LCD's to the headrests and go to town =]
FYI: you can use a card reader-sata and buy a 32GB card reader drive.... and that can be a cheap alternative to SSD =]
