Why does car stay in 5th gear until warmed up?

Why does car stay in 5th gear until warmed up?
Noticed when I start the car, the highest gear it'll stay at is at 5, when the coolant bar gets to about a 1/3, it'll then go into 6th gear (that's when I assume the car is at normal operating temperatures)

haha makes sense, not sure why I didn't connect the dot, but it's at a higher RPM so seems like the engine would be working harder when it's colder so it seems kind of counterintuitive
