hello everyone, would a reputable car shop know what the best fitment would be for my car (2017 IS200T) or should I provide them with the exact sizes based on what people are currently using as set ups?

im a super newb and not sure what I need but I know I want 19 inch rims staggered with the fattest rubber I can fit wide and the same or close side wall size to stock. Ill be staying at stock ride height.

You don't usually want to deviate from stock diameter. You will have inaccurate speedometer readings and in some cars, ABS will light up and be dysfunctional. If you increase in rim size, you lose tire sidewall. But if you just want to throw the biggest tires you can on it to fill in the wheel well, you will get the look you're going for.. probably have all kinds of rubbing issues though.
