Would it be ok if I were to change just one of the crankshaft position sensors and/or camshaft position sensors (intake and/or exhaust)?

Check the wires first. But yes, fix the one and be done.

As in, what color goes where or how to repair?

You might consider hitting the graveyard for a used connector and splice them with butt connectors and shrink tubing orhers order the replacement connector and the appropriate crimp tool.

Can this be used to test accurately? It seems this issue is popping up regularly now. As the model ages and what not. I would suspect brittle connectors showing their age. This will be a regular occurrence.
