I can easily get 400 miles on a tank when I'm doing highway miles. My best mileage on a highway trip was 28 mpg in my AWD GS. The tank is 17.4 gallons, so that would equate to 487 miles. You need to get 23 mpg to get 400 miles out of that tank, so say 25 mpg with reserves. Too much stop and go traffic will quickly kill it, though.

Another thing I'll add is the infotainment control, in my opinion, is much better than newer Acuras. My wife has a 16 MDX Advance and having to look at 2 smaller screens and hit the screen multiple times to complete functions is a big pain to me. I am in the minority around here and feel the mouse control and function buttons in the GS are a breeze to operate once you learn the appropriate feel. No comparison in the interior finish either with the GS much more of a luxury look and feel.
I'm 100% with you on that. My Highlander and the GS share the same nav system (excluding screen size). The Highlander has a touchscreen. The touchscreen is literally the only thing I don't like in our Highlander. I find the remote touch in the GS to be very easy.

Gas mileage is all dependent of the weight of your right foot. I averaged ~26mpg on the trip up from FL when I bought mine last week. since then I am averaging ~17mpg on the twisty mountain roads of TN. The motors in these cars really sing, and its hard not to turn up the volume. But I will say I am absolutely in love with this car.
