What are the offsets? I think with the right offset and some pulling, measuring and camber you can get a 275, but dont think its worth all of that mess. 255 would be most practical with little work. Well, also depends how low, I'm going by if you were gonna tuck I think they're gonna stick out no matter what.
These are 17s with 255s on front and rear, you can see plenty of room to grow (in the rear):
This is a 295 on the rear with very little work (also with 255s on the front):
Again, it all depends on where the face of your wheel is sitting on that rim (offset)

My goal is to keep stock rims, I like the 17's and how they look, and this is my DD, so I can't go nutty. I have Conti Pure Contact's on the car now with 30k+ miles on the tires, and still wearing very well.
But wouldn't mind going wider next time around.
How much of a difference in size is 255 on 18's vs 17's? Of course offsetting the aspect a size.
255 is 255 no matter what size wheel. 255 is a millimeter measurement. Its the sidewall that changes with the width and wheel diameter. The sidewall size is an aspect ratio dictated by the width and diameter of the wheel. 255 is just over 10"
