it really depends on how invovlved you want to get

the easiest way is to drain the radiator and refill

but then there the 2 drain plugs on the engine which would be a little time consuming

Yea that part is usually really time consuming. You would basically have to stand there with the engine on, for like 30 min, while it runs, heats up, opens the thermostat, feeds the heater core, and then starts to boil the air out. I am sure you can search for more detailed instructions.

can anyone else chime in, or is there a DIY available anywhere around here? I want to do this this weekend, and don't feel like paying a mechanic for it either.

All right Corky and Chicago, you asked for a tutorial on how to change the coolant, here is the best one I've seen: http://www.lexls.com/tutorials/cooling/coolant.html

The car used to illustrate the technique is an LS 400 but that should make little difference as the V8 engine is virtually the same.
