I guess with tan or black interior, I'd go red. Arrest me red. A little darker than Candy Apple.
With a gray interior, I'd do a deep metallic gray, almost black.

some derivative of Spectra Blue (like a lot darker)
Navy blue of some sort
Cinnabar derivative (darker)

personnally, i am in LOVE w/Diamond Pearl White... that w/a black interior = 
(in my eyes at least). there is something about that color at night that i love. however, i picked the car i have now b/c i like the color combo (millenium silver/black). i also thought about an ivory interior, but i dont think i'd ever let anyone to sit inside the car

Cinnabar with Ecra or Ivory interior and another coat of clear.
I made phone arrangements for a '98 Cinnabar GS400 2 weeks before I bought the car I have now. I talked to the salesman the night before to let him know I'l lbe there. Drove 3 hours to Sacramento and he sold 30 minutes before I got there. I WANT CINNABAR!!!!! (But Champaigne/Burnished Gold is hot too.) No offense but silver is WAAYY too common.
Just look at this color : drooling smiley here :
