It seems to me that Sport mode tightens steering a bit. Is it the case or just my imagination. I agree that the cluster is color is cool!
From pages 202 and 203 of the 2019 Lexus ES350 Owner's Manual:
▶︎ Vehicles without Adaptive Variable Suspension system
...
3 Sport mode
Controls the transmission and engine to provide quick, powerful acceleration.
...
▶︎ Vehicles with Adaptive Variable Suspension system
...
• SPORTS+ mode
Helps to ensure steering performance and driving stability by simultaneously controlling the steering and suspension in addition to the transmission and engine.
...
So, it is just your imagination unless you're driving an F Sport equipped with AVS with the drive mode switch set to the SPORTS+ position.
For me, the car drives ideally in Normal mode. Almost never depart from Normal though. I will admit that the gauge cluster in Sport setting is nifty.
Similarly, I tried the paddle shifters once in three years—-the day I got the car. Simply enjoy the Lexus accelerating and shifting like the luxury car it is.
I am 99,999% on Eco. I tried it a couple of times and that’s it.
Do owners use Eco? Is it appropriate for long freeway travel to maintain speed even on long upgrades without bogging down the engine? Does it improve MPG sufficiently to bother? I'm hoping it will improve the range before requiring a fill-up for those long trips.

I have the ES300h UL. In sport mode the steering gets tighter. The tighter steering is the main reason I do not use Sport mode.
There is a custom setting, I have never changed or set it for steering in sport mode. I know it is tighter..

In my own testing of using Eco, I didn't get any better mpg in eco vs normal. The lack of throttle response completely negates any gain for me. The only time I can see it being useful is during long road trips as eco mode tends to be a bit easier on the HVAC system
