how do I change the default screen (ES350 with Nav)? Can I make it so it remembers the last setting? Right n ow it reverts to Map after a few seconds.

 

If you go into Menu -> Setup -> General, there is a setting that says "Auto Screen Change" - I think that's what you're looking for. Change it to "Off" - when it's "On" (the default), it will bring you back to the map after several seconds.
