Best Quick Detailer Spray, and why?
Currently using Mother's (was Meguiar's).
My car is coated with Gyeon MOHS and I follow up a rinse off with QD touch up to eliminate water spots and errant finger prints. Is there any better (preferred) products in the underworld that aren't the standard shelf items (Mothers, Meguiars, Eagle One, Turtle Wax Black/Ice, etc) that is in every Advance Auto?
Shine? Chemical Guys?

Optimum No Rinse. (ONR)
Because it's the best and 99% of pros use only that (it plain works, has many uses depending on how much you dilute it, and cost effective because it's available in different sizes, not just 16oz bottle you pick up at the store with other products.

ONR is the most economical solution and very popular for the reasons listed above.
But if cost isn't an issue, then I would recommend Gyeon cure. Cure comes with the Gyeon Mohs install kit as a maintenance spray. It can be sprayed on while the car is wet and only requires 1 or 2 sprays per panel. If you over apply, then you'll get streaking. Cure is a spray sealant, so it technically isn't a quick detailer, but it is easily my favorite spray sealant.

For the inbetween just regular washes and such is what I'm more aiming for.

ONR is a multipurpose tool. It can be diluted to different ratios based on needs. The original use is to be a no rinse washing solution, but it releases dirt from the paint so well that it is often used as a quick detailer too. When diluted properly, it shouldn't harm a ceramic coating at all.
I don't QD my car often because I want to minimize how often I touch the paint. I maintain my cars by washing them with Gyeon Bathe+ and spraying them with Cure every month. Cure provides the beading I like to see, so why throw something else into the mix that could potentially provide diminishing returns?
At the end of the day any quick detailer from a reputable brand will work. It's just personal preference. I've never used CG V7, so I can't comment on it. Let us know how you like it.

Quick update on Chemical Guys' V07 QD.
It was pretty cold outside (under 50*) and a mostly dry car. V07 definitely goes on heavy. Cut the handle squeezes to just a touch for a micro spritz (1-2) per panel. Works on and off easy. Left a great shine, slick and smooth. Just took a little longer to work on and off than say Meguiars (which is very thin imho). I like it.

Zach recommended Meguiars Xpress spray wax and I'm a big fan of it for cost, slickness and ease of use. I use it as a drying agent. I previously used V07 and to me it does not leave any slickness. Also used Reload , but to me it has to be applied heavy to remove any water spotting and is not cheap. I also like Optimum spray detailer and gloss enhancer.
