I've noticed you really have to speak clear, loud (not shouting), and enunciate. The last is very important. You can say "help" and it should pull up a list of commands. It has gotten better with Gen 5 and Gen 6 systems.

And like thinkin said, definitely WAIT FOR THE BEEP. 
I've seen a lot of customers hit the button and immediately start talking.
