If the Nulon oil sheered under those conditions to bring it's viscosity lower then a 20wt without raising the water temps then there is something wrong with the oil you were using.
Going with the oil they suggest is going to create fluid friction and more start up wear.
Even though you don't live in cooler climates the fact of the matter is the lower Winter number is beneficial even on a hot summer day.

Try the oil they suggest and if the noise returns then you will know if it's an aeration issue.

When I switched to TGMO 0W20, my engine performed so much better and it also became smoother and quieter.
