Will these fit?
These are Rodericks or Vossen knockoffs I guess. The car is a 98 LS400 with Megan coil overs. I was planning on running the same tires that are my gs400. 275-30-20 in the rear and a 245-30-20 in the front. I'm not looking to poke rims or pull fenders here. I can shave and roll if needed but that's as far as I'm willing to go.

Will the fronts even clear your calipers? The rears should fit with ease as they are not aggressive offsets at all. The fronts will fit as long as they clear your calipers. You probably wont beable to roll around slammed how ever. The fronts will be nice and sunk so as long as they clear your calipers with out spacers you wont rub in the front. But the rear may rub a little with out a roll.

Good question! I do have hub centric spacers and extended studs on the car already since it running a set of ls430 rims. 10mm on the front and 20mm on the rear if I was told right. I guess I could push them out on the front a lil and roll the fenders to get them to clear the calipers..... I was thinking of going with a concave wheel maybe too. That would allow the clearance for the calipers on the front right?
My GS4 is tucking the 20s hard up front but they rub and bump everything and I even have most the inner front fender liners removed.....Its brutal.

Then what's a good fitting 20 set up without pulling. I'll roll them all day. Is there a recommended offset for a 10" rear and a 9" front or so when running the tire size I mentioned above?

For a square tire setup its going to vary all over the board. Not all 245 and 275 tires are the same actual widths. Some compress more than others due to sidewall flex. Are you wanting a flush/square setup that doesnt rub? Or just looking to put grip? The bottom line is when it comes to fitment it is all subjective. Id say a 9 +35 and a 10.5 +30ish rear (will definetly need a roll and will still rub but look close to not being sunk.
And puredrifter is right - its all about the face design. Not all concave wheels fit big brakes. The super concave ones only fit the rears and the fronts barely concave at all. Especially if you want square tires and high offsets. Also dont forget about inner rim to suspension clearance when running wide wheels and high offsets.
