Well, I'm not into stretching tires. I'll admit it looks good but now you are risking your rims, ride quality and the performance.
Getting correct sizes for different rims is not that hard. If you look on tirerack, you'll be able to find the minimum and maximum rim width you can use to for a particular tire size. Theoretically, you want to keep your overall diameter to be as close as to the stock diameter so that your speedometer will read the speed correctly.
For, 8.5" width rim, you will have no issue using 225/35 tires. For 9.5" width, if you want to do it properly, you can go with 255/35 or 265/35 tires. We can debate if stretch look is the way to go or not all day long. It will be your personal preference.

Depends on the brand of tire you use, too. Michelin, who is known to run on the conservative side with their approved sizes, says you can go as small as a 245/35/19 PS2 on a 9.5 inch rim, while Toyo says you can run a 235/35/19 T1R on the same size wheel - so 245/35/19 on a 9.5 inch wide wheel wouldn't be "stretching" the tire by any manufacturer's standards.

225/35/19 19x8.5 - 245/35/19 19x9.5 it wont even stretch i have these sizes and they dont stretch at all. i have falkens no much of a difference. now i have 215/35/19 19x8.5 - 245/35/19 - 19x10 on my new wheels and they stretch nicely with toyos..

Correct size tires means to get a matching set of the wheel to the tire according to the recommended width of that tire manufacturer. Tire rack has the specs to them on their site. When matching the wheel to the tire one should stay at the recomended width. My IS350 uses Volk LE37T 18X8.5 +40 and 18X9.5 +40 with 235/40/18 and 275/35/18 respectively. They are at the recommended wheel width.
I really don't understand how stretching looks better or improves performance. But I do understand how it helps with fender clearance with aggressive offsets.
