30% on the whole windshield. I have 30% on my windshield on my X5 and I can see good at night. Plus it helps with retards that drive with their high beams on in the opposite direction at night.

Uhhh Im not sure if it is legal. If its non reflective, it shouldn't be a problem. Ive gotten pulled over for my 5% on my front windows and the officer didnt notice the tint on the windshield.

When I was young, it was cool to have dark tint so I did 15%.
Now that I'm older and more mature I feel like lighter is more 'me' so I would prefer 35-50% for my old age of 25
What is most important is the proper protection from the sun so don't skimp on the budget!

the guy that is doing them is using global window film..anyone have experience with this film?

Don't go with Global!!!! That is cheap crap. Don't get a nice car and skimp on the film. Go with a quality film. If that it what the tint shop uses, I would go eslewhere. If they dont' care about quality film, I doubt they care much about quality work either
Top end would be ceramic, and there are several options there. If you aren't willing to shell out $400-500 on that, you could go with a top quality dyed film from a major player (3M, Llumar, etc). I personally chose SunTek CXP for the extra heat rejections properties, and didn't have to pay as much as I would have for ceramic.
Keep in mind that most if not all states do have laws against having tint on the windshield. It is illegal in most if not all states. I have said it before, but I think 35% is enough all around. People will still be able to see in, but at least you can see out at night. Much darker and it is hard to see at night with our dimming mirrors.
