I noted the same thing. I have a UL arriving at the end of the month and although I've priced through almost every site that I could find, cars.com, kbb.com, etc. it would be nice to be able to price through the lexus site.
The UL package is noted in the "Explore the ES", but not in the pricing configurator
I just found this under the "Features" tab
UL Package
$2,935[*] (ES) / $2,435[*] (ESh)
Under the "Features" - "Options/Packages" tab you can find the individual options.
Doesn't seem to be a very smooth roll-out of the online pricing. They are all MSRP as far as I can tell, no Invoice.
Do you think that this is done to confuse buyers or is this just poor design?

They tailor the build your own options based on regional availability, they've done that for years. Try putting in different zip codes when you go to configure, you'll get different options.
For instance, I was not able to configure a UL ES using my zip code with the previous generation either. But if you put in 90210...you could. 90210 doesn't seem to bring up a UL this time, but check back it may as production ramps up.
As for invoice, manufacturer's websites never list invoice. The manufacturer and dealer don't want you to know invoice price. You have to get that from a third party source.
Think about it...does BestBuy's website show you wholesale prices?

Yes, I'm sorry to see that at least for my region you can get an A, B, or C package car with almost no choice of options as has been the case for several years. Most of the new cars I have seen so far had different options and I was hoping to order one with exactly the options I want and save about $1,500. I guess I can go with Option C but hope they don't also say no black interiors as they also have done in past years even though most of the cars I have looked at so far have had black and looked very nice.
And you're right the "build your car" feature sure doesn't work very well yet.
