They can increase the rigidity of the chassis/reduce flex and could improve handling in tight corners or bumpy roads. How beneficial and how much you might notice it depends on your driving style and sensitivity. Those who thing the ES is too soft in turns might notice some improvement.

It makes me wonder what the addition of the strut bar will do in a crash? Will it cause a decrease in the overall safety of the vehicle in a crash?

Technically speaking, the addition of the strut will increase the overall mass of the vehicle and therefore based on physics low (F=m*a) will theoretically increase your chance to survive the crash.
However realistically it will probably do nothing. My personal opinion it is waist of money and time.

I had them in my GTI (rabbit) the lower support was more important in that car than the top.

Basically it strengthens the chassis. reduces spread (or compression) of the struts under hard cornering and bumps.

if you live in a pothole /snow belt state, then it would be of some use.
or, you lower the car, and put low profile tires on and like to drive aggressively.

With the soft suspension on the es, most will not see any improvement. at all.

Worrying about my strut towers flexing was never a consideration when selecting the ES 350. If I wanted a firmer handling sport suspension I would have gone with a different brand....
