I just upgraded from an 2010 ES 350 to a 2011 ES 350 with Nav. The previous owner apparently had the door locks programmed so the front door only would unlock. Any advice on how to restore the settings back to "normal"?

the smart key default is press the unlock once, driver door opens, press unlock again within 3 secs all other door open. there is a smart key custom feature to open all doors on one unlock press but i think the dealer has to do it.

You can do it yourself. See the Owner's Manual pages 519 and 523, and the Nav. Manual page 363.

any dealer has access through customization settings, however most nav unit has the function to change a few things.
