If finding tuners in your area is diffucult, then maybe an AEM EMS V2 or Haltech would suit you better since they have been around longer and there is often more tuners knowledgeable with those standalones. There has to be someone around you who know's how to tune one of those standalones, get familiar with the 2jz community near your area. On here, my.IS, supraforums, etc post up a thread in your location's subsection (ie Southern California, Midwest, East Coast, etc) inquiring about the best places to tune 2jz's with either: ProEFI, AEM EMS, or Haltech. Those 3 EMS's are the more popular and reliable standalones available for the GE's. If you haven't made an account on my.IS or SupraForums yet, you should. There are a lot of active members there who have been in the game for quite some time and are very knowledgeable and will help answer questions/share some relevant insight towards your build.

I'm going to talk to a couple shops locally. There are a couple import tuning shops around here. There are some but mostly focus on turbo Hondas.
I could use some more advice though. My motor did not come with a throttle body. Should I just locate a stock TB or should I just spend the money on an aftermarket??

I mean if you're going all out you may as well do a FFIM (forward facing intake manifold) since you have a ton of room in the engine bay. XS power makes a cheap FFIM that you could use and just clean up the welds since it looks like you guys know your way around a welder. Then I'd suggest a q45 throttle body if you want an upgraded diameter & fairly PnP

Alright...need some Lexus turbo guys to chime in.
I removed that little hat with the small bolts that goes over the intake cam gear. I've been told that this is a horrible thing to do...any advice?
Also looking to just delete the VVT-i.....any suggestions for that?

Can anyone help me find an online download of IS300 Service manual, repair guide, wiring diagram, fuel diagram...ect??
