I have 18" X 8" GS430 wheels. Recommended tire size is 245/40/18 but I may be picking up 235/40/18 tires. Would this be too narrow for an 8" wide wheel?

youll be totaly fine, i have a 215/35/19 on an 8.5" you have nothing to worry about. stock size on the 2gen is 18's is 225/40 on a 8"

235 is nine and a quarter inches, so you aren't even stretching. Zero to worry about.

The op changing tire sizes will be marginal for speed difference. You make it sound like the speedo is grossly off.

how in the world does "keep in mind the speedo will be inaccurate" get translated into "the speedo is wayyyy off" I didn't say it was going to be completely off, it was just a friendly reminder - some people don't realize that a narrower tire with the same aspect ratio is actually a shorter tire as well...

granted, it is negligible, only about 1.2%, but it is worth noting...

I apologize that you didn't think it was necessary, but little information like that goes overlooked often, and considering that wheels and tires use to be my specialty, it actually annoys me when people say "its ok, its not that much different"
