I never understood CF wheels, how are they supposed to hold weight? I know CF is strong and all but holding up a car is kinda crazy IMO

Carbon Fiber is stronger than steel, aluminum, etc... it's extremely stiff when built to be, can be built to be semi-flexible as well...
Consider this, entire Indy cars are built from carbon fiber - certain parts are meant to be protective, certain parts are meant to be crushed upon impact, etc.... Those cars can endure twice their weight in downforce...
