This is the right diameter for ES300 with 18". I think the OEM width is 7" and LS wheel has 7.5" therefore 245. 40 would make you the same diameter as the OEM 16" 60 series tires. You could do 45 to give you more profile but you will be driving faster than your speedo says...
By the way if you used 17" then it should be 245/50/17, not 45 as I had made a mistake... You can check the tire fitment using Tirerack's website...

245/40-18 and 245/45-17 are the same diameter both about 25.7"
stock size is 205/60-16: diameter of 25.68"
you were correct the first time...

My experience with the ES has shown that a 245 may have clearance issues on the rear strut housing. Not sure how it'll work in combination with the stock wheels and offsets, but a 245 is pretty wide on a 7.5" wide wheel, making it difficult to predict how far the tires will "bulge" past the rim flange. This balloon look seems okay on a large car like the LS, but it may look a little odd on the ES.
225/45-18 is a safer fit, and (I think) will look better on the narrowish wheels.
