Ok... I've done a search, and know what tires will not fit with 20 X 8.5" rims,... can I get a short list of tires that we know for certain will work and not be excessively outside of the outer diameter specs of the factory tire/wheel combo??

You need something narrow to work with the 20x8.5.
Perhaps a 245/40-20 car tire.... most of the SUV tires are too wide and too tall.

The OFFSET of the wheel will also affect how far the tires stick out. of the fenders

I priced 245/40/20's and they were $350 a tire,... NOT EEEEEEVEN GONNA DO THAT!
