If you have uneven setting on the coils to counteract the uneveness, wouldn't that affect the overall control/ride anyways?

I'm thinking of getting coils cos being on Tanabe springs only for 9 years it's time to change the shocks so why not do the lot.

You only need to worry about left and right unevenes not front or rear. Adjusting the front and rear differences with coils is what the coils are for. My car gap difference is with left and right.
