Glad I found this because I'm looking to do the same thing!
I have seen some IS guys talking about it, but no GS people.
I would also like to change the gauges in my 2014 GS350 Lux. I had to choose between the Lux Package and the F-Sport package. Ended up going for the Lux, but I really want the F-Sport Gauges!

I want to do this as well to my 2013 GS, but I also want to retain my mileage. Any know if on these cars the mileage is stored in the cluster itself or does it read it from the cars ECU?

I thought that beginning a few years after digital odometers became standard in Toyota and Lexus vehicles that the mileage is stored in both the ECU and the instrument cluster.
Some vehicles have a 'manipulation' light that lights up when the instrument cluster mileage doesn't match the ECU mileage. I've even heard that some brands of vehicles will not start if there is a mismatch. I would be very sure that you know exactly what you are getting into before swapping a different instrument cluster into your car. The results may cause a lot of difficulty to correct and could be expensive...and likely troubling for you to document with authorities, not to mention making the car less valuable.
I would like to know more about what system Lexus/Toyota use for that exact purpose. I know that on all my BMW's we could swap regular clusters out for the M sport clusters without an issue, where as Audi/VW would brick your cluster if you tried swapping it to say 999,999 miles.

The following spreads light on how BMWs deal with this:
BMW uses redundant data that is shared between the IKE & LCM...if the info mentioned in data point #1 below doesn't match...then the tamper dot illuminates & no data is shared. Each module will still accumulate mileage...but it will only add to what each module already reads. In order for the data to match...all 6 data points must be considered, adhered to, & followed.
BMW dealership's equipment will not allow them to overwrite USED IKEs & LCMs...they only work with new or officially refurbished components where mileage has been "zeroed". There is aftermarket software/hardware that will allow you to overwrite the VIN...as well as zero the mileage...this is the way to get used components to communicate with each other.
The tamper dot is located right before the trip odometer location on both the high & low clusters (see pic below).
