I once did a headliner on my Firebird. 3M makes a high temp spray adhesive especially for headliners and fabric. I bought it at Oreilly's but I am sure you can get it anywhere.

While my 2004 has ECRU leather, I believe we purchased from the same place. I requested that the foam be either replaced or built-up during the leather replacement process. The seats were looking flat and had lost that sculpted bucket and bolster appearance after 110,000 miles and 12 years. The final result looked very good with no wrinkles or loose areas.

I would buy foam, glue on two three pieces to the existing foam. Then shape it with knive, rasp, sand paper. If you get foam a little less firm, you can leave it a little to bulky, that way you can compress with the leather. Just have to make sure the foam is a smooth shape first, so it doesn't look like cellulite.

The headrests seem to be the worst...if I do anything, I may look at adding something to the headrest...for now, I am just going to finish the passenger seat.

I had a friend who was an upholsterer. He once told me you get a garment steamer and you apply it to the foam. It rehydrates the foam and plumps it up
