Does anyone have any ideas on what causes this? I *think it's happened before last year.

I started it up after about 8 hours and it jumps all over the place. Turn up the volume and you can hear how weird it sounds.

It went on like this for about 60 seconds, then all of a sudden evened out at 1100RPM. Sorry for the camera rotation at the end.

Sounds like it could be a lot of things. First and easiest thing to try would be the iac valve. I would try to clean it out and see if that fixes it. Otherwise maybe a fuel issue? Or you might have a vacuum leak under the hood as well.
