I'll be starting a new thread this weekend when I have the chance. But to answer a few of your questions.
You can either be running carplay or the android side, not both at the same time (although you can switch between them).
For carplay you can play Spotify/Pandora/Apple Music for music and use maps (waze, gmaps, a-maps) at the same time. Music will silence for a bit while directions come through just like you normally have it on your phone.
One thing to note is that carplay is basically using the airplay technology on your iphone. So your iPhone is doing most of the processing. It also has the same limitations where carplay will require you to have the app that's being displayed onscreen to be on the foreground on your phone. So if you change to messages on your iphone, your nav display will also change to carplay view of messaging. This means that if you try to answer a text while you drive, you'll lose maps display for a moment.
