P0218 code - How much coolant do I need to replace the thermostat

The correct error code is P0128 not P0218, can you please change it for me?
Given this, does your guidance change?
I thought the P0128 code was due to a faulty thermostat....

If you have not replaced the coolant in 3 yrs then go ahed drain it all out .. including the engine block. And do not forget the over flow reservoir.
I get 1 gallon of concentrate and add about 1.25 gallons of distilled water. 1:1 is what people blindly follow, but I tweak it based on where I live and a safe mix ratio is printed on the concentrate jug.
Make sure you replace the right sensor/switch. One is at the bottom of the radiator and one is at the top of the engine. If the one you are replacing is at the bottom of the radiator, you can get bye by draining the radiator only, and for the one at the top, you can get by by doing partial drain.
The coolant is bit expensive, but but hey if you do it once in 3 years its not bad. Just make sure the coolant you buy is safe for your engine and it can coexist with what you have. Or save yourself the headache and simply pick up the Toyota product.
