Default mishimoto thermostat

ive searched here and on my.is and couldnt find anything. i was wondering if it was ok to run the mishimoto thermostat since it activates at 61C(79.6F) and the oem runs at 82C(115.6F). would my coolant be at the same temp after car running for a while(unless im constantly moving having air flow) since the coolant sensor is the one that activates the fan to cool the coolant down. i would get the trd one but if i can get the mishimoto for cheaper and running about 10C cooler why not..
