I would use a metal ball valve that you can get at any hardware store so you can turn it on and off manually, its not much larger than that and you can still have heat when you need it. your a/c wont be as cold if you leave it on all the time, but it will still work alright.

also there are fully electric options. The toyota system has a electric vsv that operates the heater valve with vacuum..
nowadays they have electric ones that are used on retrofitting a/c into older cars, like this one: Vintage Air Replacement Heater Valves 461173
I'm not sure what signals it wants, but if it were compatible or just needs a relay it would get rid of the whole vaccum system and be smaller.

how do I go about the manual valve option, where I can just use heat in the winter ? and AC in the summer?

remove the 2 hoses going to the stock heater valve, install a manual ball valve between those 2 hoses instead of the stock heater valve.
would look something like this.


you could probably get creative with the hoses so the valve is out of sight behind the engine.
also they have lots of different types of ball valves, you can probably get one without a huge handle.
