Default Maintenance check before a long drive.

What should I be checking before a long 6 hour drive?

I'm changing my inner and outer tie rods. Also changing my rear coilovers because mine are currently finished.

I noticed that my gas mileage has been pretty poor lately, even when driving sparingly. I'll try resetting the ECU tomorrow. Any other recommendations for tune-up?

Tire Pressure! make sure its at the perfect level and it'll improve your mileage.

check the coolant levels, oil levels, transmission levels, power steering, washer fluid...etc.

Get some maf cleaner and spray your maf a bit. Last and the most important, tighten all of your throttle cables. There are 3.

Check to see if your spare tire has air in it too.

I have no spare tire

I check my tire pressures religiously also.

Coolant levels and everything is fine, I'll probably be getting an oil change before I go.
Should I also change the oil in my differential?
I also haven't changed my tanny oil in awhile, but it's still real smooth..

I forgot to mention that it also idles a bit high and burns a little rich.. Around 1,200 rpm...

Actually, i think you're right about the maf. Definitely change the fluids if you can, oil, transmission, and differential.

Also make sure you have a clean filter. The high idle could be lots of things. Is that idle rpm when warm? Or is it while on cold start ups?

I don't think your high idle is because of the Idle Air Control Valve:

What is the normal idle rpm for the 1jz?

Are you sure your air filter is clean? Try taking it off momentarily and see if it gets better. I don't know what else to tell you, I'm not that experienced with the 1jz and your high idle. Hopefully someone with more knowledge will chime in.
