Your local Toyota dealer will have all of the oils you are looking for.
The Toyota transmissions are particularly choosy. I would only use Toyota fluid. The full oil capacity of the transmission is around 8-9 quarts, but a simple drain and fill will only require ~3 quarts.
The diff takes SAE80, 80W-90, or SAE90 gear oil. If you are in a hot climate (over 18*C), favor the SAE90. If you are in a cold climate (below 18*C), favor the SAE80. If you are in a four season climate, favor the 80W-90. Capacity is 1.35 quarts.
Not sure about the spark plug gap on a 1JZ.

Plug gap will depend on your boost level, but I'd go with .028, and adjust from there. Make sure you get feeler gauges when gapping, not the lil', flat, circular plug gapper they have sitting in a bin at the register of Autozone!

I'm sure 75/90 would work just fine. If you want your tranny to have a bit of a better feel to it, you can use some of the higher dollar fluids if you'd like. I run Neo 75/90 in my race cars, but it's very expensive. It just depends on what you wanna do.
