Default Timing Belt/ Mechanic Advice

Hey guys, I've gotten lots of good info on this forum so far, so thanks. After 10+ years of dreaming, I bought a 2000 LS 400 w/144k miles. No known timing belt replacement so I ordered the AISIN kit (per this group's recommendation). I'm shopping for a local, trustworthy mechanic to do this work, any recommendations in the DFW area (preferably north dfw)?

Also I've read that this kit does not include a certain gasket that is necessary to complete the work, any insight on this? Finally, do you all recommend replacing coolant temp sensor (ECT) during this job? Thanks in advance!
