Purchasing a new 2017 LX 570...which wheel size should I go with, 20 inch or 21inch?
I am looking to buy a new LX 570, and was hoping to get some pros and cons on whether to go with the 20” wheels that come standard, or upgrade to 21" wheels. I will mostly be commuting on the freeway to work, and a few times a year some light offroading with my son. Any info / guidance will be much appreciated.

18". Better ride on road. More confident off road.

Thanks ohiois. Based on this and what gfci said, it sounds like the only thing going for the 21" is the looks, while the 20" wheels are more comfortable on the road, better handling off-road, and cheaper. If comfort / smoothness of ride is more important to me, then 20" is better than 21" - is that fair to say?

17" was definitely never offered on the LX 570, but I am running LT285/70/17. They're 4.5% larger than stock diameter.
285/60/18 is the stock size on LC, but 285/65/18 is about the same diameter as 285/70/17 (only .1" smaller) and gives you more sidewall than the stock tire. Lots of folks running 285/70/17 and 285/65/18 over on ih8mud.
You will find LT tires to be more durable than P-rated tires.

With just little offroading, you can probably survive with 20" wheels. But I've never seen any LXs with this option here in the USA - all had 21" wheels. I stronlgly recommend selling 21" wheels and replacing with 18". I use 275/65R18 Michelin LTX AT2 on '16 Land Cruiser wheels (275/65R18 Bridgestone Blizzak DMV1 on Tundra wheels for winter).

The 2017 LX comes with either 21 inch wheels with 275/50R21 113V XL Dunlop GrandTrek PTA3 tires, or 20 inch wheels with Michelin Latitude Tour HP 285/50R20 112V tires. Speed and load ratings of the Dunlop tires tires are very close to the Michelin tire's ratings, as you would expect since both were selected for the same vehicle and applications by Lexus engineers. Whether a particular Lexus LX has 21 or 20 inch wheels appears to depend upon which wheels and tires were available on the assembly line at the time the vehicle arrived at the wheel installation step of assembly. If you prefer one wheel/tire over the other, the dealer will likely just swap them from another new LX on the lot, since, unlike you, most buyers don't pay much attention to what was installed on their new vehicle.
To me, an important question is "what replacement tires are available for my wheels?" While most folks do not buy a new Lexus and immediately replace the tires with higher performance rubber, some do. And there is always the question of what to buy when the original tires wear enough to warrant replacing. For me that was about 50,000 miles on my 2013.
Right now, the internet tire site TireRack.com lists no alternative tires for a Lexus LX with 21 inch wheels. It seems you might be stuck with buying the same Dunlop replacements, even if you didn't like the original set of Dunlops. I've owned 5 Lexus vehicles, and I prefer the driving feel of the Michelins. On the same tire web site, you have 16 replacement tires for the LX 20 inch wheels. Bridgestone, Hankook, Pirelli, Continental, Yokohama, Dunlop, Kumho, Sumimoto, Goodyear, and General. This includes two snow and ice tires for those who need such things.
My vote would be for the 20 inch wheels with original Michelins.

18's are an after-sale you buy it deal. Though I don't see why you couldn't negotiate it on a new truck equipped with Tundra wheels, especially if the dealer handles both lines.
