Default what are the consequences of...

having a bad coolant sensor? Does the radiator fan stop working or that has nothing to do with it? How can I check to see if the sensor is working properly?

either you won't have tempature readout in the dash for engine temp, CHECK ENGINE light will turn on, or the car will refuse to start.

how about the radiator fan? this is the one thing that I'm really concerned about.

There may be two different coolant sensors. On many cars, one sensor produces the signal for the temperature gauge, and another produces the signal for the ECM for fuel control and fan switching. You'll have to dig into it a bit more.
